Acero sits in Maplewood, not St. Louis proper, and that distinction matters to the room it runs. This is a municipality that has built its own dining identity apart from the city and apart from Clayton's older money, and Acero reads as its Italian answer at the upscale tier: multi-course, occasion-driven, priced for a night that matters rather than a Tuesday stop-in. The kitchen works Italian classics with a modern lens without losing the plate to the concept.

Crudo opens the case for the raw bar approach, cool and citrus-forward, a dish that has less to do with The Hill's red-sauce canon and more with a coastal Italian register that Maplewood's newer wave of chef-driven rooms has room to explore.
